Yes. You can choose your Minecraft server type when you order, and change the version yourself later.
Server types include Vanilla, Paper (best performance), Spigot (plugins), Forge and Fabric (mods). Check the store for the types available for each plan.
To change your game version:
- Log in to the Unified Panel and open your game server
- Take a backup or download your world first. Going to an older version can damage a world
- Open the "Startup" tab and change the version value
- Click "Save Configuration"
- Fully stop the server, then start it again. A quick Restart does not switch the version
